The way we use natural resources and waste food poses a serious threat to the environment. According to the United Nations Food and Agriculture Organization (UN-FAO), one third of the world’s food is lost before it reaches consumers. In the United States (US) alone, 40–50% of food is thrown away, with an estimated annual cost of approximately $750 billion per year.
Most of this waste ends up in landfills contributing 9% to the total US greenhouse gas emissions. For example, when food scraps are sent to the landfill, they decompose anaerobically and produce methane, one of the most potent greenhouse gases responsible for climate change, pollution and loss of biodiversity.
As defined by the Environmental Protection Agency (EPA), “Sustainability is based on a simple principle: Everything that we need for our survival and well-being depends, either directly or indirectly, on our natural environment. To pursue sustainability is to create and maintain the conditions under which humans and nature can exist in productive harmony to support present and future generations.”
